Recipe: Valentine’s Day Chili

This is heavily adapted from a recipe in Good Housekeeping ^-^.  Except I’m not sure if they actually tried their recipe because when I followed the recipe it completely lacked flavor, so I added a bunch of seasonings.  Here’s the more delicious version.


  • 1 tsp dried oregano
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp sugar
  • 1/4 tsp cayenne pepper
  • 1 small onion, chopped (I actually used a yellow one, but red is better)
  • 1 large beet, chopped
  • 1 red bell pepper, chopped
  • 1 lb ground beef
  • 1 can dark red kidney beans
  • 1 can fire roasted diced tomatoes (or regular ones, but that’s what I used!)
  • 1 cup water
  • Several dollups of sour cream


  1. Cook ground beef.
  2. Add water, onion, and beet first; these take the longest to cook.
  3. Then add red bell pepper and diced tomatoes.
  4. Finally, add the kidney beans and seasonings (oregano, cumin, chili powder, garlic powder, salt, cayenne, and sugar.)
  5. Serve chili in bowls. Add dollup of sour cream to top. It’s half borcht, half chili!

Vegetarian option:

Replace 1 lb ground beef with 1 16 oz. can of light red kidney beans (pinto beans.)


  • Cayenne pepper can be pretty damn hot.  Go light if you think this might result in crying children.
  • Water can evaporate.  When cooking the beets, make sure there’s enough moisture in the pan.
